Characteristics of Picual AOVE
Olive oil of the Picual variety is one of the most highly regarded in the world for its health properties, sensory intensity and great stability. It comes from the Picual olive, predominant in southern Spain, especially in Jaén, and is characterised by a profile very rich in bioactive compounds.
Properties of Picual oil
One of the main virtues of Picual is its high content of polyphenols, natural antioxidants that help fight oxidative stress and protect the body’s cells. Thanks to these, Picual oil helps prevent cardiovascular disease and has anti-inflammatory effects.
It’s also very rich in oleic acid (a healthy monounsaturated fat), which helps regulate cholesterol: it lowers LDL (“bad” cholesterol) and raises HDL (“good” cholesterol). This benefits heart and artery health.
Another standout property is its great stability against heat and oxidation. Picual takes longer to turn rancid than other varieties, so it better preserves its nutritional and sensory qualities over time.
From a sensory point of view, Picual is an intensely flavoured oil, with medium-high bitterness and pungency, green notes (olive leaf, tomato, fig leaf) and a very distinctive character.
Differences from other olive oil varieties
Compared with other varieties, Picual is mainly distinguished by its power and resilience:
- Compared to Arbequina, which is milder, sweeter and fruitier, Picual is more bitter and pungent. Arbequina is ideal for those who prefer delicate oils; Picual, for those looking for character and strength.
- Compared to Hojiblanca, Picual has greater stability and a greener profile. Hojiblanca is more balanced and slightly sweeter on the finish, while Picual is more intense and long-lasting.
- Compared to Cornicabra, which is also robust, Picual tends to have more green notes and a higher polyphenol content. Cornicabra is somewhat rougher, with a later-developing pungency.
- Compared to Empeltre, typical of the Ebro valley, Picual is much more powerful. Empeltre is mild, almond-like and almost without bitterness.
In short, Picual oil stands out for its richness in antioxidants, its high oleic acid content, its great stability and its intense flavour. Compared to other varieties, it offers more character and greater resistance over time, making it an excellent choice both for a healthy diet and for demanding culinary uses.
